Gluten-free nutty granola


  • 1/3 cup maple syrup
  • 1/3 cup roasted almond butter
  • 1 tsp vanilla extract
  • ½ tsp pink salt
  • 1 tbsp + ½ tbsp cinnamon
  • 2 cups gluten-free rolled oats
  • ½ cup pumpkin seeds
  • ½ cup sliced almonds
  • ½ cup walnut pieces 
  • ½ cup cashew pieces
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp ground flaxseeds
  • ½ cup chocolate chips (vegan)


Preheat oven to 325ºF. 

In a large bowl, mix and whisk together the maple syrup, almond butter, vanilla extract, salt, and cinnamon.

Pour into the bowl the rolled oats, pumpkin seeds, almonds, walnuts, cashews, chia seeds, hemp seeds, and flaxseeds. Mix everything together.

Transfer the mixture to an oven tray covered with parchment paper (or a tray greased with coconut oil) and press it into a thin, even layer.

Put the tray on the bottom rack of the oven and bake for about 20 minutes. Remove from the oven and toss the granola. Put back in the oven and bake for another 5-10 minutes. Remove from the oven.

Wait for 5-10 minutes and then add the chocolate chips. They will melt. If you don’t want the chocolate chips to melt, wait until the granola has cooled down to add them.
