
Plant-based patties from juice pulp
SERVINGS: 8 patties
INGREDIENTS
- 1 flax egg (2 tbsp ground flax seeds mixed with 5 tbsp of warm water. Let sit for 10-15 min)
- 1/2 red onion, peeled and minced, sautéd with no oil
- 1/2 cup cooked quinoa (aprox. 1/4 uncooked quinoa)
- 1/2 cup cooked lentils (aprox. 1/4 uncooked lentils)
- 1/4 cup oat flour
- a pinch of salt
- a pinch of black pepper
- 1 cup juice pulp (from 1 apple, 2 beets, 3 carrots, a piece of ginger)
- a pinch of dried rosemary
- a pinch of cumin
- a pinch of cardamon
- 1 garlic clove minced
- 1 tbsp chia seeds
METHOD
Preheat the oven at 400ºF.
In a bowl, mix all the ingredients together. Make patties with your hands and place them on an oven tray covered with parchment paper. Put the tray in the oven for 10-15 minutes, then flip the patties and put back in the oven for another 10 minutes.
You can eat the patties without adding anything or with hummus or adding plant-based barbecue sauce for extra flavor. You can even use them to make burgers! 🙂
