Plant-based patties from juice pulp

SERVINGS: 8 patties


  • 1 flax egg (2 tbsp ground flax seeds mixed with 5 tbsp of warm water. Let sit for 10-15 min)
  • 1/2 red onion, peeled and minced, sautéd with no oil
  • 1/2 cup cooked quinoa (aprox. 1/4 uncooked quinoa)
  • 1/2 cup cooked lentils (aprox. 1/4 uncooked lentils)
  • 1/4 cup oat flour 
  • a pinch of salt
  • a pinch of black pepper
  • 1 cup juice pulp (from 1 apple, 2 beets, 3 carrots, a piece of ginger)
  • a pinch of dried rosemary
  • a pinch of cumin
  • a pinch of cardamon
  • 1 garlic clove minced
  • 1 tbsp chia seeds


Preheat the oven at 400ºF.

In a bowl, mix all the ingredients together. Make patties with your hands and place them on an oven tray covered with parchment paper. Put the tray in the oven for 10-15 minutes, then flip the patties and put back in the oven for another 10 minutes.

You can eat the patties without adding anything or with hummus or adding plant-based barbecue sauce for extra flavor. You can even use them to make burgers! 🙂
