
Vegan Pad Thai
SERVINGS: 1-2
INGREDIENTS
- 1 1/2 cups of spiralized zucchini
- 1/4 of red bell pepper
- 1/2 cup edamame (cooked)
- 1/3 cup of cucumber
- 1/2 cup red cabbage
Dressing
- 1 1/2 tbsp raw tahini
- 2 tbsp lemon juice
- 1 garlic clove
- a pinch of salt
- a pinch of smoked paprika
- a pinch of cayenne pepper
- a pinch of cumin
- 2 tbsp of water (for desired consistency)
Toppings:
- 1/2 tsp hemp seeds
- 1 tsp sesame seeds
METHOD
Cut the pepper, the cucumber and the red cabbage in small pieces. Then put them in a bowl and add the spiralized zucchini and the edamame. Mix well.
In a small bowl, add all the ingredients for the dressing and mix them. Add the dressing and the toppings on the vegetables.
