Zucchini noodles with avocado sauce




  • 3 cups of zucchini noodles
  • 1/2 cup of cherry tomatoes

Avocado sauce

  • 1 avocado
  • 1 garlic clove
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp crushed red pepper
  • 1/2 tsp salt
  • 1 tbsp extra virgin olive oil

Optional: 1 tbsp nutritional yeast and 1 tsp hemp seeds.


Put the zucchini noodles in a bowl. Then cut the cherry tomatoes in half and add them to the bowl.

For the sauce, on a plate, mash with a fork the avocado until smooth. Peel the garlic clove and on a cutting board cut it in very tiny pieces (you can also use a garlic press if you have one). Then add the garlic, onion powder, garlic powder, salt, olive oil, and crushed red pepper to the avocado. With a fork, mix everything together.

Finally, add the avocado sauce to the noodles and mix well. You can add nutritional yeast and hemp seeds for a twist in flavor.
