Pulp juice bread

SERVINGS: 1 loaf

INGREDIENTS

  • 1 flax egg (2 tbsp ground flax seed+5 tbsp warm water) > let sit for 10-15 min
  • 1 ripe banana mashed 
  • 1/2 cup maple syrup
  • 2 cups juice pulp (ginger, carrot, beet)
  • 3 x 1/4 cups almond milk (blend 3 x 1/4 cups water + 1/4 cup sliced almonds)
  • 1/2 tsp pink salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 x 1/3 cups rolled oats
  • 1.5 tsp baking soda
  • 1/2 tsp baking powder  
  • 1.5 cups oat flour 
  • 1/2 cup chopped walnuts
  • 1/3 cup pumpkin seeds 
  • 1/2 cup Cranberries
  • 2 tbsp almond butter 

Toppings:

  • Almond butter

METHOD

Preheat oven to 350ºF and prepare a loaf pan by lining with parchment paper.

In a large bowl mix all the ingredients until combined.

Transfer the mixture into a lined loaf pan and put it in the oven for about 45-50 minutes. This time might vary based on the size/shape of the pan used.

Top with almond butter. You won’t regret it 😉
