- 1/4 cup quinoa
- 6 slices of peach (I defrosted them) or 1/2 ripe peach
- 1/2 tomato, diced
- 1/2 avocado, diced
- 1/2 cup kale
- sliced almonds
- pumpkin seeds
- pomegranate seeds
- a drizzle of lemon juice
In a pot, add the quinoa with 1/2 cup of water. Bring to boil and then decrease the heat and let it simmer for 20 minutes (the quinoa will absorb all the water).
While the quinoa is cooking, soak the kale in warm water for 10-15 minutes and massage it in the water for a couple of minutes. Drain.
In a bowl, combine the kale, the quinoa, and the rest of the ingredients. Squeeze some lemon juice and combine.
