- 6 baby potatoes (I used colorful baby potatoes)
- 1/2 red onion
- 1/2 cup frozen carrot
- 1 garlic clove
- a pinch of salt
- a pinch of pepper
- a pinch of ground turmeric
- a pinch of ground ginger
In a pot with boiling water, add the potatoes (washed and cut in half). Cook over medium heat for 15 minutes, then add the carrots and cook for another 10 minutes.
In a pan, sauté over medium heat the onion (peeled and cut in slices) for about 10 minutes (I didn’t add any oil on the pan).
In a blender, add the potatoes and the carrots with a little bit of the water you used to cook them. Add the rest of the ingredients and blend. Add additional water to achieve the desired consistency.
Top with chia seeds, hemp seeds, and nutirtional yeast, or anything else you desire 🙂
