Purple potatoes with broccoli salad

INGREDIENTS

  • 8 small purple potatoes, not peeled
  • For the broccoli salad click here
  • 1/2 avocado
  • hemp seeds
  • a drizzle of olive oil
  • a pinch of salt

METHOD

Preheat the oven at 400ºF. Wash the potatoes and place them on an oven tray covered with parchment paper. Roast them for 40 minutes. Remove them from the oven and check with a fork if they are fully cooked. If they are not fully cooked yet, put them back in the oven for another 5 minutes and keep checking until cooked.

Put the potatoes on a plate and cut in half. Add a drizzle of olive oil and a pinch of salt. Serve with the broccoli salad and half avocado topped with hemp seeds.
