Plant-based ceviche

SERVINGS: 4-5

INGREDIENTS

  • 1/4 cup red quinoa, cooked
  • 1 avocado, diced
  • 1 orange, cut in small pieces
  • 1 red grapefruit, peeled and cut in small pieces
  • 1 tomato, cut in small pieces
  • 1/2 red onion, finely chopped
  • juice of 1/2 a lime
  • 1/2 tsp salt

METHOD

Mix all ingredients together in a big bowl and enjoy plain or with tortilla chips 😉
