
Plant-based ceviche
SERVINGS: 4-5
INGREDIENTS
- 1/4 cup red quinoa, cooked
- 1 avocado, diced
- 1 orange, cut in small pieces
- 1 red grapefruit, peeled and cut in small pieces
- 1 tomato, cut in small pieces
- 1/2 red onion, finely chopped
- juice of 1/2 a lime
- 1/2 tsp salt
METHOD
Mix all ingredients together in a big bowl and enjoy plain or with tortilla chips 😉
