- 1 package of veggie pasta (vegan)
- 2 avocados, diced
- 2 tomatoes, diced
- 4 oz of white mushrooms, sliced
- 1 zucchini, chopped
Bring 6-10 cups of water to boil. Add the pasta (add more water if needed to cover the pasta) and bring it to boil. Reduce heat and let it simmer until the pasta is cooked (6-9 minutes, see instructions on the package).
While the pasta is cooking, add a drizzle of avocado oil on a pan and, over medium heat, cook the tomatoes, mushrooms, and zucchini for about 10-15 minutes (until cooked).
In a large platter, add the pasta, veggies, and avocado. Drizzle with olive oil and a pinch of salt and mix well.
You can add pumpkin seeds, hemp seeds, sesame seeds, etc.
