Pumpkin energy balls

SERVINGS: about 12 balls

INGREDIENTS

  • 1 cup dates (pre-soaked 10 min in water)
  • 1/2 cup pecans
  • 1/3 cup pumpkin purée
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup vegan chocolate chips
  • A pinch of salt

TOPPINGS

  • Minced pecans

METHOD

Put the pecans in a food processor or blender and pulse until finely ground. Add the rest of the ingredients except the chocolate chips. Pulse until combined. Add the mixture in a bowl, add the chocolate chips, and mix.

Place in the fridge for an hour to chill.

Use your hands to form the dough into small bowls and cover with pecan pieces.

Store in the refrigerator.
