Mung beans and millet

INGREDIENTS

  • 1/4 cup mung beans
  • half 1/4 cup millet
  • 3/4 carrot (chopped)
  • 1 ripe avocado (cut in dices)
  • 2 garlic cloves (minced)
  • a pinch salt
  • a pinch turmeric
  • a pinch of black pepper
  • a pinch basil
  • a pinch oregano

Toppings

  • hemp seeds
  • pumpkin seeds
  • cranberries

METHOD

In a medium pot, add the mung beans, millet and chopped carrot. Carefully, add 1.5 to 2 cups of boiling water. Bring the water to boil, reduce the heat and cover the pot. Simmer, stirring occasionally, until all the liquid has been absorbed, 25-30 minutes. When all is cooked, turn off the heat and add the salt, turmeric, black pepper, basil, and oregano and stir the mixture.

Transfer the mixture in a bowl. Add the garlic and the avocado, and mix everything together.

Finally, top with your favorite seeds, dried fruit or nuts 🙂
