- 1/3 white rice
- 1 cup water
- 1 cup sliced mushrooms
- 1/2 avocado
- 1/2 tsp extra virgin olive oil
- 1 tsp lime juice
- 1 pinch salt
- 1 pinch onion powder
- 1 pinch garlic powder
- 1 garlic clove
Put the water and the rice in a pot and bring to boil. Then, cover and let it cook at low heat for 20-25 minutes.
While the rice is cooking, heat a pan at medium heat. Add the mushrooms and a teaspoon of avocado oil. Stir regularly. Let the mushrooms cook for about 15 (or until they get a dark brown color).
To prepare the dressing, on a plate, mash the avocado with a fork. Then, add the olive oil, lime juice, salt, onion powder, and garlic powder. Cut the garlic in very small pieces and then add them with the avocado. Mix everything well with the fork.
Once the rice is cooked, place it on a bowl, add the mushrooms and the dressing, and mix.
