
Cauliflower rice
SERVINGS: 3
INGREDIENTS
- 4 cups cauliflower florets
- 1 cup canned/cooked garbanzo beans
- 1 cup cherry tomatoes
- 1 1/2 avocados
Dressing
- juice of 1/2 lime
- 2 tbsp nutritional yeast (optional)
- 1 tbsp hemp seeds (optional)
METHOD
Put in a blender or food processor the cauliflower and blend until it resembles rice. Add the cauliflower in a big bowl. Then, cut the cherry tomatoes in half and the avocado in square pieces. Add the tomatoes and avocado in the bowl as well as the garbanzo beans. Finally, add the lime juice, nutritional yeast and hemp seeds, and mix well.
