Veggie Soup

 

This recipe was inspired by the Hippocrates soup in the Gerson Therapy. This soup is known for its healing and nourishing properties; it is alkalinizing and detoxifying, helps clean the kidney and repair the damaged cells. 

Adding cooked foods in a raw diet has its benefits. Cooked foods are easier to digest, provide the organism with fiber that helps digest raw foods, and the body absorbs their nutrients easier. 

Some foods such as tomatoes have great properties when cooked. Cooked tomatoes have increased antioxidants levels and an increased cancer-fighting ability compared to raw tomatoes.

INGREDIENTS

Soup

  • 2 celery branches
  • 2 small leeks
  • 1 onion
  • 5 or 6 medium tomatoes
  • 2 medium potatoes
  • some parsley
  • 4 or 5 garlic cloves

Toppings

  • 5 or 6 asparagus
  • hemp seeds
  • a drizzle of extra virgin olive oil

 

METHOD

Soup: Wash and cut all the ingredients for the soup but the garlic. Add them in a pot and cover with water. When the water is boiling, let everything cook over low heat for about 1 1/2 hours. Once the soup is cooked, add all the veggies with the water in a blender (add the raw garlic too), and blend until smooth. If the blender is not big enough, add some soup and blend, and then do the same with the rest and mix everything together afterward in a big pot. You can store the soup in the fridge for 5 or 6 days.

Toppings: Preheat a pan over medium heat and add a drizzle of avocado oil. Wash the asparagus and cook them in the pan. Keep turning around the asparagus until they acquire a golden color. Then, remove them from the pan and add them to the soup. Finally, sprinkle some hemp seeds on the soup and add a drizzle of olive oil.
